BANANA BROWNIES

When I say I LOVE brownies, I really mean it. I can make them all the time and never get sick of them. The best thing is you can use anything you want – different chocolate, fruit, nuts or some other toppings. This healthier version is my favourite when I’m on a diet or when I have some over-ripe bananas. You can definitely have them for breakfast without feeling bad 😉

You need:

  • 1 cup oat flour (100 g) 
  • ½ cup natural cocoa powder (If using Dutch-processed cocoa (alkalized), replace the baking soda with baking powder) 
  • 1 tsp baking soda 
  • 1 tsp cinnamon
  • ½ tsp fine sea salt
  • 1 cup mashed overripe banana (about 2 large bananas) 
  • ¼ cup maple syrup
  • ¼ cup sugar (coconut, brown..)
  • 1 tbsp brewed coffee or non-dairy milk
  • 2 tsp vanilla extract/20 g vanilla sugar 
  • ⅓ cup unsalted nut/seed butter

Instructions:

  • Preheat oven to 350°F/177°C/gas 4 and line an 8×8 baking pan with parchment paper
  • In a mixing bowl whisk together the oat flour, cocoa powder, baking soda, cinnamon, and salt
  • Place the bananas in a small bowl, and mash with a fork. Add the maple syrup, coconut sugar, vanilla, and almond butter, and stir vigorously until combined
  • Pour the wet mixture into the dry, and stir to combine. Transfer batter to prepared pan, and bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean
  • Let brownies rest in the pan for 30 minutes, then lift out by parchment paper. Allow to cool completely, then cut into 12-16 squares. Enjoy! <3
