APPLE CHEESECAKE WITH SALTED CARAMEL

for BASE:

  • 150 g Lotus (caramel) biscuits
  • 40 g melted butter

(cheesecake) FILLING:

  • 300 g mascarpone
  • 50 g sugar
  • 1 egg

(apple) FILLING:

  • 3 apples
  • 1/2 tsp cinnamon

for CRUMBLE:

  • 1/2 cup sugar
  • 1/2 cup flour of the choice
  • 1/4 cup oats
  • 50 g melted butter

SALTED CARAMEL:

  • 1/2 cup sugar
  • 45 g butter
  • 1/4 cup whiping cream
  • 1/2 tsp salt

HOW TO DO IT?

  • Preheat oven to 350F/180C/gas 4 and put baking paper on baking paper
  • Mix biscuits in mixer, add butter and mix until combined. Put mixture on baking paper and bake for about 10 minutes
  • Whip mascarpone with egg and sugar until smooth, pour onto hot biscuit mixture
  • Peel apples, core them and cut into small pieces. Mix with cinnamon and put on mascarpone mixture
  • Mix sugar, flour and oats together, add butter and mix into crumble (for the best result use mixer)
  • Crumble the mixture on the apples and bake for 30 minutes. Then let the cake cool down and put in fridge overnight
  • Before serving, do not forget to pour over the caramel sauce and enjoy!
